hese have been subsoiled, drained and levelled and spread over several terraces with excellent sun exposure. The Romans already grew vines on this suitable type of soil located at an altitude of 380 metres in a depression that generates a microclimate.
The soil is prepared according to the traditional methods - claws, ploughing, no chemical weed killer or fertiliser.
The vines are fastened onto 3 threads (1m80) and some stalks are removed before ripening in order to not exceed the maximum production of 35 hectolitres per hectare. The vineyards of La Calisse lie on a plateau dominated by oak forests and pines. The plots are ideally suited to organic viticulture and the great thermal amplitude between day and night gives the wines their structure and their complexity. The secret of Château La Calisse wines lies in the quality of the berries harvested at maturity in perfect condition, then vinified by Patricia Ortelli to produce wines full of finesse and elegance.
The modern winery permit circulation of the grape providing at best, with a displacement of the wort gravity and a limited oxidation. The vintages “Patricia Ortelli” and “Etoiles”, are aged in Russian, American and French wood. After breeding, which rarely lasts more than six months, they are assembled with wine barrel. Today, Château La Calisse runs 11.8 hectares of vineyards and put on the market about 50 000 bottles per year. In each color, Château La Calisse offers a vintage Calisse, a vintage Patricia Ortelli, and when the vintage allows it, the vintage “Etoiles”, flagship of the field.
The wines of Château La Calisse are present on the wine list of the greatest Chefs of the Côte d'Azur. Main export partners are Germany, Switzerland, USA and the Netherlands.
